ANSWERS FERMENTED FISH STOCKAnswers Fish stock is made from 85% bone broth that is made from fluke and sole bone fillets that are wild caught in the north Atlantic. They make the bone broth over 24 hours (they also use apple cider vinegar) then once it has cooled, we add in 15% of a paste that we have made from whole raw sardines also wild caught from the north Atlantic, and then add our whey (which is whey in its natural form that is from when we make our cheese) and Celtic sea salt for fermentation.
